For 8 puff hearts:,
Strawberry cracker: to be made at least 2 hours before the choux is cooked
. a little strawberry puree to color your dough
. 125g light brown sugar
100g cold butter
.125g flour
1/ Mix all your ingredients in a bowl. Roll out your dough with a rolling pin between 2 sheets of baking paper. Remove the top sheet and pre-cut your shapes.
2/ Put your baking sheet back and place your plate of cracker in the freezer.

Choux pastry: find the recipe here. I just replaced half the water with milk for an even fluffier choux.
1/ Put your choux pastry in a pocket with a no. 12 tip. On a sheet of baking paper, pipe your cabbage into a heart shape.
2/ Place a cracker just out of the freezer on your cabbage then head to the hot oven for 40 minutes at 320F.
3/ Leave your puffs to cool on a plate then make a small hole in the lower part of the puffs using a piping tip or the tip of a knife.

Raspberries Chantilly:
.20cl whipping cream
.20g icing sugar
. 100g raspberries mixed with a little cream
1/ Put your equipment and the cream in the fridge 30 minutes before.
2/ Put your cream in the bowl of your mixer, very cold, then beat on high. When the cream begins to thicken, add your icing sugar in 3 times, then add your raspberry purée.
3/ Put in a piping bag.
4/ Remplir vos choux généreusement.
5/ Arrange them in the shape of a flower and add a red or pink peony in the center.
