Angel Cake

Cette recette est d’une simplicité incroyable. Vous n’avez besoin que de 3 ingrédients principaux et le résultat est d’une légèreté ! Vous l’aurez compris, je suis tombée fan de ce gâteau Angel Cake.

Be careful, do not use just any mold for this type of cake . It makes a mold for you with a "chimney tube" ( see photos below ) inside for better cooking distribution.

For a cake for 8 people:

.350g sugar

.135g flour

.pinch of salt

.12 eggs white

.1 coffee spoon of lemon juice

.1 vanilla bean or agrum zests

How to prepare it?

1 / Preheat your oven to 320F . In a blender, mix the sugar , the flour and a pinch of salt for 5-10 minutes.

2 / Whip the egg whites firm then add the vanilla and the lemon juice .

3 / Add the dry mixture (sea sugar-salt) to the whipped egg whites in several batches. Mix delicately with a Maryse (spatula).

4 / Put your preparation in the mold and direction the hot oven for 40-45 minutes .
